Pav Bhaji

Pav Bhaji is a staple Indian snack. It is very popular in Maharashtra, especially Mumbai’s Pav Bhaji is world famous. The word Pav Bhaji is derived from the Marathi language Pav and Bhaji. Pav is a type of double roti and bhaji is made by cooking many vegetables like tomato, cauliflower, capsicum etc. in ghee or butter.

Ingredients
  

  • 2 tbsp butter
  • 3 tomatoes finely chopped
  • ¼ cup peas
  • ½ capsicum finely chopped
  • 2 potatoes boiled and mashed
  • 1 tsp salt
  • 1 ¼ tsp kashmiri red chili powder
  • ¼ tsp turmeric powder
  • 1 ½ tsp pav bhaji masala
  • 2 tsp kasoori methi
  • 3 tbsp coriander leaves finely chopped
  • 1 tsp ginger garlic paste
  • 1 onion finely chopped
  • ½ lemon juice
  • water to adjust the consistency

To Roast the pav:

  • 8 Bread Roll Pav
  • 4 tsp butter
  • ½ tsp red chili powder
  • ½ tsp pav bhaji masala
  • 4 tsp coriander leaves finely chopped

Instructions
 

  • Heat 1 tbsp butter in a kadai tomatoes, peas, capsicum, potatoes
  • Add salt and fry for 2 minutes.
  • Now add half cup of water and mix well.
  • Cover and boil for 10 minutes.
  • Mash the vegetables till soft and make sure there are no lumps.
  • Now add chili powder, turmeric, pav bhaji masala, kasoori methi and coriander leaves.
  • Sauté for a minute, and make sure the spices are well cooked.
  • Stick the prepared vegetable mixture on the side of the pan and make a place in the center of the pan.
  • Heat one tsp butter and add tsp chili powder, 1 tsp pav bhaji masala, 1 tsp kasoori methi.
  • Also add 1 tbsp coriander leaves, 1 tsp ginger garlic paste, 1 onion and juice of lemon.
  • Fry well and make sure the onions are cooked well.
  • Add cup of water or as required adjusting consistency.
  • Boil and mash for 5 minutes or till the pav bhaji is smooth and silky in texture.

Preparing the Pav

  • Now prepare the pav by heating butter and add a pinch of chili powder, pav bhaji masala and coriander leaves. Mix well.
  • Now cut 2 pavs in the middle and fry them with spiced butter.
  • Fry both the sides of the pav till the pav becomes slightly hot.
  • Serve pav and bhaji as pav bhaji with some chopped onions, coriander, lemon and butter.
