Palak Paneer

500 grams Spinach pureed or 1 Guchi Palak 200 grams Cottage Cheese Paneer cubed 2 tbsp Oil 1 tsp Cumin seeds 1 Bay leaf 1 tsp Ginger finely chopped 1 tsp Garlic finely chopped 1 cup Onion grated 1/2 cup Tomatoes pureed 2 tsp Salt 1/2 tsp Garam masala 1/2 tsp red chilies powder 1/2 tsp Coriander powder 2 Black cardamom crushed 1 tbsp Cream
Boil spinach in a pressure cooker and grind it to make palak puree.
Heat oil in a pan and put cumin, when it splutters, add bay leaf.
When it starts to crackle add ginger, garlic and onion paste. Cook until it gets pinkish-brown in color.
Add salt, garam masala, coriander powder, red chilies. Mix well and saute for 1 minute.
Now, add tomato puree and stir fry over medium heat.
Add spinach and saute for 2-3 minutes.
Now, add paneer cubes to the mix well so that it mixes with the palak gravy.
Pour some cream over itand mix well and serve hot with chapati, naan or roti.
