Palak paneer is a popular North Indian dish of Indian-style cottage cheese mixed with a creamy spinach sauce that is infused with spices. Here is a 40-minute Palak paneer recipe that you can make for weeknights.

Ingredients
  

  • 500 grams Spinach pureed or 1 Guchi Palak
  • 200 grams Cottage Cheese Paneer cubed
  • 2 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 Bay leaf
  • 1 tsp Ginger finely chopped
  • 1 tsp Garlic finely chopped
  • 1 cup Onion grated
  • 1/2 cup Tomatoes pureed
  • 2 tsp Salt
  • 1/2 tsp Garam masala
  • 1/2 tsp red chilies powder
  • 1/2 tsp Coriander powder
  • 2 Black cardamom crushed
  • 1 tbsp Cream

Instructions
 

  • Boil spinach in a pressure cooker and grind it to make palak puree.
  • Heat oil in a pan and put cumin, when it splutters, add bay leaf.
  • When it starts to crackle add ginger, garlic and onion paste. Cook until it gets pinkish-brown in color.
  • Add salt, garam masala, coriander powder, red chilies. Mix well and saute for 1 minute.
  • Now, add tomato puree and stir fry over medium heat.
  • Add spinach and saute for 2-3 minutes.
  • Now, add paneer cubes to the mix well so that it mixes with the palak gravy.
  • Pour some cream over itand mix well and serve hot with chapati, naan or roti.
