Kheer - Indian Rice Pudding
Kheer has a special place in Indian sweets. It is very rich, delicious, creamy dessert. Rice, Milk and sugar only three ingredients can make such a delicious and sumptuous sweet that anyone can relish at any time, any day or in any weather. It is not contained for summer or winter or monsoon season. It is for all seasons, all weathers and can be eaten any one child, young and old.

1 liter Milk Full cream 1/4 cup long grain rice 10 strands Kesar / Saffron some strands of 1/4 cup sugar 1/4 tsp cardamom powder 2 tbsp almonds chopped 2 tbsp cashew nuts chopped 2 tbsp pistachios 1 tbsp Raisins chopped
Wash and soak the rice in water for 30 minutes. Drain and keep aside.
Take a Kadai or deep non-stick pan. Rinse the pan with some water and discard the water.
Put the milk in the pan or Kadai and bring it to boil.
Add rice and mix well and cook on slow flame for 40-45 minutes mixing in between to avoid getting it burnt.
Add strands of Kesar in tablespoon of hot milk from the pan or you can keep use separate milk also.
Now add sugar and mix well and simmer on a low flame for 10-15 minutes stirring occasionally.
Add saffron milk, cardamom powder and chopped dry-fruits and cook for 10-12 minutes or till the mixture become thick and creamy.
Adjust the sugar according to your taste. Some people like more sweet. So adjust it to your taste.
Now switch off the flame and transfer the kheer to a bowl.
Garnish with dry fruits.
