Date Rolls

Date Rolls are very easy and very healthy snack. Also it is easy to make. In just over 15 minutes it is ready.

Ingredients
 
 

  • 2 cup dates about 30-40 pieces, roughly chopped or grind in a grinder
  • ¼ cup almond chopped
  • ¼ cup cashew chopped
  • 2 tablespoon pistachio chopped
  • 2 tablespoon walnuts chopped (I didn't use walnut)
  • 2 tablespoon sesame seeds
  • ½ tablespoon butter or ghee
  • ¼ cup raisins
  • ½ teaspoon cardamom powder

Instructions
 

  • Deseed the dates (if you don't find seedless dates) and chop the date as fine as you can.
  • Take a pan or thick bottom Kadai, put chopped nuts in it and dry roast for 30 seconds on medium heat until lightly roasted. Keep stirring and avoid burning. Remove it to a bowl.
  • Add sesame seeds in the same pan and roast for few seconds till it roasts or you hear cracking sound of sesame.
  • Remove it to same bowl and set aside.
  • Add ghee or butter in the pan and put the dates in it.
  • Cook on low heat till the mixture is soft mixing it with the help of spatula.
  • Add cardamom powder and raisin. Mix it well.
  • Remove from heat.
  • Add nuts and mix with a spatula until combined.
  • Let the mixture get cool enough to handle. Then mix further with your hands.
  • Transfer the date mixture to cling wrap or to a foil or wrap and roll it into a log.
  • Keep the log in the fridge for 30 -40 minutes and cut slices of date roll as required. Serve.
