Cabbage Fried Rice

Ingredients
  

  • 200 grams rice
  • 200 grams cabbage - shredded
  • 1 medium sized onion -chopped
  • 1 medium sized tomato - chopped
  • 1 inch ginger.
  • 2-3 cloves of garlic if you like
  • 1-2 green chili
  • 1 tej-patta / bay leaf
  • 2 cloves - long
  • 1 inch cinnamon
  • 1 teaspoon cumin seeds / jeera
  • 2 tablespoon oil
  • 1 teaspoon red chili powder
  • 1/4 teaspoon haldi / turmeric powder
  • 1/4 teaspoon garam masala
  • 1.5 cup water for boiling rice
  • 1 tablespoon green coriander leaves - finely chopped
  • Salt to taste

Instructions
 

  • Wash rice thoroughly till the water comes clear. Soak rice for 30 minutes.
  • Drain the rice and add into pressure cooker with 1.5 cup water
  • add 1/4 teaspoon salt to it.
  • Pressure cook for 2-3 whistles on medium flame
  • As the pressure cooker cools down, open the lid and fluff the rice with a fork.
  • Heat 2 tablespoon oil in a pan or kadai.
  • Add cumin seeds, cinnamon, cardamom, Luong and bayleaf. Saute for a minute.
  • Add onion and stir till translucent.
  • Add ginger, garlic, chili crushed or paste. Mix well
  • Add tomatoes, mix well and add haldi, chili powder, garam masala and coriander powder
  • Saute till the tomatoes softens and oil leaves edges.
  • Add cabbage, also other vegetables like peas, potatoes, carrot or any other vegetable
  • Add salt to taste and stir well. cook till the cabbage is translucent
  • Add rice and mix well and cook for 3-4 minutes.
  • Garnish with coriander leaves.
