Bhindi Fry
Bhindi Fry is a dry sabzi with onions and tomatoes. You can skip tomatoes but I like it with tomatoes.

- 250 grams Okra / bhindi / Lady fingers
- 1 medium sized onion sliced thinly
- 1 large tomatoes chopped
- 1 green chilli
- 1 teaspoon ginger - garlic paste or ginger and garlic chopped or crushed as you like
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon mango powder / aamchur
- 1/2 teaspoon garam masala
- 1/2 teaspoon fenugreek leaves dry kasuri methi - optional
- 2 teaspoon coriander leaves to garnish
- 3 tablespoon refined oil
- Salt to taste
Wash bhindi thoroughly and wipe dry with a towel or let it dry on its own.
Slice off the head and tail of each bhindi and slice small pieces of bhindi / small width
Heat refined oil or mustard oil in kadai.
Add onion and saute till they turn slightly golden.
Add ginger-garlic paste, saute till raw aroma goes away.
Add tomatoes. Stir well.
Add haldi, chili powder, coriander powder, jeera powder and mango powder. Saute well till tomatoes becomes mushy and oil leaves edges.
Add bhindis. Add salt and stir well.
Cover the lid and cook on slow flame.
Check after 3-4 minutes and stir it every time.
Once bhindi is done, add garam masala and kasuri methi. stir well
Garnish with green coriander leaves.
