Ingredients
  

  • 3 potatoes Boiled
  • 1 Onion chopped
  • ¼ tsp Cumin powder
  • ½ tsp Chaat masala
  • ¼ tsp Black salt
  • ¼ tsp Black pepper
  • ½ tsp Lemon juice
  • ½ tsp Red chili
  • 2 tbsp. Oil

For Green Chutney

  • 1 cup Green coriander
  • ½ tsp Black salt
  • 1 Green chili chopped
  • ½ tsp Lemon juice

For Tamarind Chutney

  • ½ cup tamarind or 50 gram
  • ½ cup dates or 100 gram
  • ½ cup jaggery gur
  • ½ red chili or to taste
  • ½ tsp. ginger powder saunth
  • ½ tsp Fennel powder saunf roasted
  • ¾ tsp. coriander powder roasted
  • ½ teaspoon cumin powder roasted
  • ½ teaspoon black salt

Instructions
 

  • To make Green Chutney.
  • For this, first take green coriander and wash it and clean it.
  • After this put coriander in a mixie jar, green chili and black salt. Grind well.
  • Add lemon juice to this chutney and mix it well. Green Chutney is ready.
  • To Make Tamarind Chutney
  • Put tamarind, dates, jaggery, and chili and 2 cups of water in pressure cooker on medium flame.
  • Wait for 3 whistles then put off the flame.
  • Now add ginger powder, saunf powder, coriander powder, jeera powder and black salt. And mix well.
  • Now blend it with blender and then pass thrugh the sieve.
  • Transfer it to a bowl and test it and adjust the spices accordingly
  • This chutney will be quite thick, so when you want to use it then take some chutney and add it to boiling water and then make it thin and use it.
  • For Aloo Chat
  • Cut the boiled potatoes into pieces.
  • Take a wok or pan and put oil in it and heat it.
  • When the oil is hot enough, add potato pieces and fry them till aloo turns golden brown.
  • Take out the potatoes in a bowl.
  • Now add red chili, black pepper, cumin powder, black salt and chaat masala to the fried potatoes and mix well.
  • Add chopped onion and the lemon juice over it and mix it well.
  • Now put green chutney and tamarind chutney over the potato chaat and mix this mixture well.
  • Garnish with sev, onion, small peices of tomatoes (as per liking).
  • Aloo Chat is ready.
