Bharwa bhindi is another tasty dish made bhindi stuffed with masala. It is spicy and tangy.

Bharwan means stuffed and bhindi means okra. In this dish, bhindi is cut on one side and stuffed with spices, then fried to make a wonderful side dish. It’s an easy recipe with very few ingredients and prep work. We’ll make this in the air fryer and on the stove. We want to start by rinsing the bhindi with water, then letting it air dry. You can spread the bhindi out on a kitchen towel to air dry. Or if you’re in a hurry, pat the bhindi dry with a paper towel to dry completely. We want the bhindi to be completely dry, otherwise cutting and cooking may make the bhindi soggy and sticky.

Ingredients
  

  • 250 grams Okra (Bhindi)
  • 1 tbsp Coriander powder
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Cumin jeera powder
  • ¼ teaspoon garam masala
  • 3 tablespoon mustard oil or refined oil
  • ½ tablespoon mango powder aamchur
  • ½ teaspoon Fenugreek leaves kasuri methi – optional
  • salt to taste

Instructions
 

  • Wash bhindi and pat dry using kitchen towel or let it dry naturally.
  • Cut the head and tail of each bhindi and slit on bhindi with knife.
  • combine all the spices together and mix well.
  • Gently open the sliced part of the bhindi and add masala in it.
  • Heat oil in a kadai or pan.
  • Add bhindi and mix well keeping the flame low. Stir it occasionally and do not cover it.
  • Stir and cook till it is done. check and add kasuri methi.
