Jeera Aloo

Jeera Aloo has a punch of flavors from whole cumin seeds, ground cumin, ginger, red chili powder, coriander powder and Kasuri Methi. The great part of this Jeera Aloo recipe is, you can not only serve it as a side dish with bread or dal rice, but also enjoy as a snack as well as appetizer.
Be it lunch, dinner or breakfast, my family would happily welcome this tantalizing potato side dish. The aroma of the potatoes sizzling in oil infused with cumin’s fills the air, they are in pure joy waiting for the dish to arrive at the table.
If lemon juice is not available you can use 2 teaspoons of dry mango powder (amchur powder) or 2 teaspoons dry pomegranate powder (Anardana powder) to get the lovely sour note. Add dry pomegranate powder, at the time while adding turmeric powder and red chili powder.

500 ग्राम आलू उबले और कटे हुए
2 बड़ी चम्मच। तेल
2 चम्मच जीरा
1 1/2 छोटा चम्मच धनियां कुटा हुआ
एक चुटकी हिंग वैकल्पिक
2 हरी मिर्च स्वादानुसार कटी हुई
1 इंच अदरक कटा हुआ
1/2 छोटा चम्मच हल्दी पाउडर
1/4 छोटा चम्मच लाल मिर्च पाउडर
1/2 छोटा चम्मच नमक या स्वादानुसार
2 चम्मच कटा हरा धनिया हरा
1 छोटा चम्मच। नींबू का रस या आमचूर या अनारदाना

आलू को पकने तक उबालें – नियमित प्रेशर कुकर में तेज आंच पर 7 से 8 सीटी या प्राकृतिक प्रेशर रिलीज के साथ इंस्टेंट पॉट में उच्च दबाव पर 10 मिनट।
आप इन्हें स्टोव-टॉप पैन पर तब तक उबाल सकते हैं जब तक यह पक न जाए।
आलू को छीलकर क्यूब्स में काट लें। इसे अलग रख दें।
एक कड़ाही में मध्यम आंच पर तेल गर्म करें। तेल गरम होने पर उसमें जीरा डालें, उन्हें तड़कने दें।
जीरा जलाने से बचने के लिए धीमी आंच पर।
कुटे हुए धनिये के बीज और हिंग (यदि उपयोग कर रहे हैं) डालें और कुछ सेकंड के लिए भूनें।
हरी मिर्च और अदरक डालें और एक मिनट तक भूनें जब तक कि अदरक की कच्ची सुगंध न चली जाए या यह भूरा न हो जाए।
पैन में उबले और कटे हुए आलू डालें।
हल्दी, लाल मिर्च पाउडर और नमक डालें।
आलू को सारे मसाले के साथ मिला लीजिये.आलू को मध्यम आंच पर 2 से 3 मिनट तक पकने दें.
इसे खत्म करने के लिए ताजा नींबू का रस निचोड़ें।
ताज़े हरे धनिये से सजाएँ और जीरा आलू को रोटी, चपाती, पराठे या दाल और चावल के साथ साइड डिश के रूप में परोसें।

Ingredients
  

  • 500 grams potatoes boiled and cubed
  • 2 tbsp. oil
  • 2 tsp cumin seeds
  • 1 ½ teaspoon coriander seeds crushed
  • A pinch of Asafetida hing optional
  • 2 green chilies chopped or as per taste
  • 1 inch ginger chopped
  • ½ tsp turmeric powder
  • ¼ tsp red chili powder
  • ½ tsp salt or to taste
  • 2 teaspoons coriander chopped hara dhania
  • 1 tbsp. lemon juice or Aamchur or Anardana

Instructions
 

  • Boil the potatoes until done – 7 to 8 whistles on high heat on regular pressure cooker or 10 mins on high pressure in Instant Pot with natural pressure release. You can also boil them on stove-top pan until done.
  • peel the potatoes and chop them into cubes. Set it aside.
  • Heat oil in a pan on medium heat. As the oil is hot add the cumin seeds, let them sizzle. on low heat to avoid burning the cumin seeds.
  • Add the crushed coriander seeds and hing (if using) and sauté for few seconds.
  • Add the green chili and ginger and sauté for a minute until the raw aroma of ginger is gone or it turns brown.
  • Add in the boiled and cubed potatoes to the pan.
  • Add turmeric, red chili powder and salt. Mix potatoes with all the spices.
  • Let the potatoes cook for 2 to 3 minutes on medium heat.
  • Squeeze in fresh lemon juice to finish it off.
  • Garnish with more Fresh coriander leaves and serve jeera aloo with roti, chapati, paratha or as a side dish with dal and rice.
