Curd Rice

Curd Rice is spicy, tasty and delicious recipe. Can be eaten anytime. It is prepared with steamed rice and plain curd or with additional tempering of urad dal, mustard seeds, chilies and coriander leaves. Consuming dahi rice on a daily basis helps fight disease-causing bacteria and also keeps your digestive and intestinal tract safe. All credit goes to the live active cultures found in the curd. Curd contains high amounts of calcium which helps in keeping the BMI levels in check. Probiotics present in curd keeps the digestive system in check and improves metabolism, thus facilitating the weight loss process. Consuming dahi rice helps to restore healthy microbial balance which, in turn, helps in better digestion. Also called Dahi chawal, it is a good antioxidant and has high contents of calcium.

Unlike frozen food or processed food which loose their nutritional value in the processing this is not harmful for your health as it contains no preservatives and is 100% safe to eat for children, adults and elderly. Dahi rice isn’t just rice mixed with curd. It’s actually rice that set with curd that gets made when warm rice, milk and curd are mixed together and left to work their magic for a few hours. Then there’s a flavorful tempering added to it, to give flavor to the creamy rice. Always use freshly cooked rice for best results. Stale rice is not preferred because we want the rice to be soft, and easily mash able. The pressure cooked is in my opinion, the best way to make rice for dahi rice.

Ingredients
  

  • 1 cup Rice
  • 1 cup Curd
  • 250 ml Milk
  • 1 tablespoon White butter
  • 1 ½ tablespoons Cream / Malai
  • 2 Green chilies or to taste
  • 1 tablespoon Coriander leaves – chopped
  • 1 Carrots chopped
  • 1 Cucumbers diced
  • 1 inch Ginger chopped
  • 1 Mangoes Raw
  • Few Green sweet grapes
  • ½ teaspoon Mustard seeds
  • 1 teaspoon Black gram dal
  • 1 teaspoon Bengal gram dal

Instructions
 

  • Wash and cook rice in a pan with lot of water till done.
  • Drain water and let it cool.
  • Mash with hands and add milk.
  • Heat oil, add seasonings and fry till golden brown.
  • Add green chilies, fry for a minute and pour over the rice.
  • Add butter, salt, cream and mix well.
  • Add curd, mix well
  • Garnish with cut coriander leaves.
  • Add Grated carrots, diced cucumbers, finely cut ginger, raw mango, green sweet grapes can be added according to taste.
