Palak Aloo is an Indian dish where spinach and potatoes cooked together with spices. Tastes best with roti or paratha.

Spinach has high levels of oxalate (an anti-nutrient compound), which prevents the absorption of calcium into the body and also contributes to very little iron absorption. There are several different types of palak-based dishes like aloo palak , palak paneer, palak ke pakode and palak – arbi. The word palak means “spinach” in Hindi, so these dishes always include some form of fresh green spinach. Therefore, palak recipes tend to be wonderfully flavorful and even healthy.

Potatoes every- one know is called alu or aloo in hindi. Potato is added to a lot of Indian curries and gravies. I think we have this habit of adding potatoes to anything and everything like alu methi, alu-baigan, alu-matar, alu-beans etc.

You can chop the potatoes pretty small for this recipe. This way they cook fast and also taste good with the spinach. So, do chop them to ½ inch or smaller pieces. This way they would cook in 5 to 6 minutes. Or you can use small potatoes. It is such a subzi which needs minimum of spices. Though traditionally it is a dry subzi but it can be made like palak – paneer also, by puree spinach and adding aloo little bit roasted in oil. As this aloo palak is dry subzi can be packed in tiffin for school or office.

Ingredients
 
 

  • 2 medium potatoes 500 grams, cut into small pieces.
  • 500 gram spinach finely chopped.
  • 1/4 teaspoon chili powder red
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 1 pinch Asafetida
  • 1/4 cup water
  • 1 small onion finely chopped
  • 5-6 cloves garlic chopped
  • 3 red chilies dried broken
  • 1 tsp salt to taste
  • 3 tablespoon oil
  • 1 teaspoon lemon juice

Instructions
 

  • Heat oil in a large pan. When oil is hot, add the cumin seeds and let them sizzle for few seconds.
  • Add hing, chopped garlic and dried red chilies.
  • Add chopped onions. Cook the onion until soft and translucent.
  • Add chopped potatoes and mix
  • Add turmeric, coriander, red chili powder, salt along with 2-3  tablespoons water,
  • mix well, cover the lid till aloo are almost cooked stirring in between.
  • Add chopped spinach slowly. Stir in between. Cook for 3 to 4 minutes after adding all the spinach.
  • Add garam masala and mix.
  • Squeeze in lemon juice and mix.
