Date Rolls

Date Rolls are very easy and healthy snacks. In just over 15 minutes it is ready. Dates are high in fiber and naturally sticky, they can be blended into a binder for cookies and bars, or turned into caramel. They work well as a sweetener for smoothies and salad dressings that will be blended as well.

Dates are so versatile they can be added to cakes, puddings, biscuits or used in stews, tagines, in stuffing’s or salads. Or try stuffing them with ricotta or blue cheese for an elegant appetizer. You can add dates to a variety of dishes — from smoothies, oatmeal and desserts to salads, sauces and braises. Dates are loaded with fiber, potassium, vitamin B6 and they’re rich in carbs, making them an excellent energy source. Since they are naturally high in sugar, remember a little goes a long way.

Dates have a low GI, which means they’re less likely to spike your blood sugar levels, making them a safe choice for people with diabetes. Moreover, dates have a medium GL, which means that 1 or 2 fruits at a time are a good choice.

Date Rolls हिंदी में

  • एक पैन या मोटे तले की कड़ाही लें, उसमें कटे हुए मेवे डालें और मध्यम आँच पर 30 सेकंड के लिए हल्का भुनने तक भूनें। हिलाते रहें और जले नहीं। इसे एक बाउल में निकाल लें।
  • उसी पैन में तिल डालें और कुछ सेकंड के लिए भूनें जब तक कि तिल भुन न जाए या आप तिल के चटकने की आवाज न करें।
  • इसे उसी कटोरे में निकाल कर अलग रख दें।
  • अब अगर आपको बीज निकालने की तारीखें नहीं मिल रही हैं तो तारीखों से बीज निकाल दें और तारीख को काट लें।
  • पैन में घी या मक्खन डालें और उसमें खजूर डालें।
  • मिश्रण के नरम होने तक धीमी आंच पर चमचे की सहायता से मिलाते हुए पकाएं।
  • इस बीच इलायची पाउडर और किशमिश डालें। इसे अच्छे से मिलाएं।
  • गर्मी से हटाएँ।
  • नट्स डालें और एक स्पैटुला के साथ मिलाएं जब तक कि वे संयुक्त न हो जाएं।
  • मिश्रण को संभालने के लिए पर्याप्त ठंडा होने दें। फिर अपने हाथों से और मिला लें।
  • खजूर के मिश्रण को क्लिंग रैप या फॉइल या रैप में ट्रांसफर करें और इसे एक लॉग में रोल करें।
  • लॉग को फ्रिज में रख दें और आवश्यकतानुसार खजूर के रोल के टुकड़े काट लें।

Ingredients
 
 

  • 2 cup dates about 30-40 pieces, roughly chopped or grind in a grinder
  • ¼ cup almond chopped
  • ¼ cup cashew chopped
  • 2 tablespoon pistachio chopped
  • 2 tablespoon walnuts chopped (I didn’t use walnut)
  • 2 tablespoon sesame seeds
  • ½ tablespoon butter or ghee
  • ¼ cup raisins
  • ½ teaspoon cardamom powder

Instructions
 

  • Deseed the dates (if you don't find seedless dates) and chop the date as fine as you can.
  • Take a pan or thick bottom Kadai, put chopped nuts in it and dry roast for 30 seconds on medium heat until lightly roasted. Keep stirring and avoid burning. Remove it to a bowl.
  • Add sesame seeds in the same pan and roast for few seconds till it roasts or you hear cracking sound of sesame.
  • Remove it to same bowl and set aside.
  • Add ghee or butter in the pan and put the dates in it.
  • Cook on low heat till the mixture is soft mixing it with the help of spatula.
  • Add cardamom powder and raisin. Mix it well.
  • Remove from heat.
  • Add nuts and mix with a spatula until combined.
  • Let the mixture get cool enough to handle. Then mix further with your hands.
  • Transfer the date mixture to cling wrap or to a foil or wrap and roll it into a log.
  • Keep the log in the fridge for 30 -40 minutes and cut slices of date roll as required. Serve.
