Vrat wale aloo or vrat ke rasewale aloo recipe. Nothing fancy but a simple and basic dish prepared in every household during fasting period. Boiled and cubed potatoes are combined with freshly grated tomatoes and flavored with spices.

Ingredients
 
 

  • 500 gram Potatoes
  • 4- 5 medium sized tomatoes chopped
  • 1 green chili to your liking
  • 1 teaspoon carom
  • 1/2 teaspoon turmeric powder
  • 1.5 liter water
  • 4 tablespoon Ghee or refined oil
  • 1 tsp rock salt to taste
  • 1 tbsp Coriander leaves chopped

Instructions
 

  • Wash potatoes and boil in pressure cooker with enough water and salt.
  • Peel potatoes.
  • Heat oil in a pan or kadai.
  • Add carrom seeds and let it crackle.
  • Add green chilli, saute
  • Add tomatoes, saute and stir till oil starts leaving edges. Add turmeric powder and saute.
  • Now crumble potatoes in the tomatoes and stir and mix well
  • Add 2 cups or 500 litre of water and mix well.
  • Add salt as required.
  • Simmer till gravy thickens a bit.
  • Garnish with coriander leaves.
