Cabbage Fried Rice

Cabbage fried rice is tasty and spicy rice which can be eaten any time with curd, raita or any curry recipe. Fried rice or pulao are very nice and easy to prepare meal option that we generally lean on to. This Fried Rice is a wholesome recipe with a perfect balance of all your macronutrients i.e. carbohydrate, protein and fiber coming from rice, chicken and loads of vegetables respectively added into it.

Not just the macronutrients, but this recipe also has the richness of vitamins. The cabbage rice can also be combined along with soy granules or paneer to give it an extra texture to your tossed rice. The chopped onions, ginger, curry leaves, a hint of garlic and loads of chopped coriander leaves makes it delectable for a lunch box as well.

INSTRUCTIONS 

Wash rice thoroughly till the water comes clear. Soak rice for 30 minutes.

Drain the rice and add into pressure cooker with 1.5 cup water

add 1/4 teaspoon salt to it.

Pressure cook for 2-3 whistles on medium flame

As the pressure cooker cools down, open the lid and fluff the rice with a fork.

Heat 2 tablespoon oil in a pan or kadai.

Add cumin seeds, cinnamon, cardamom, Luong and bayleaf. Saute for a minute.

Add onion and stir till translucent.

Add ginger, garlic, chili crushed or paste. Mix well

Add tomatoes, mix well and add haldi, chili powder, garam masala and coriander powder

Saute till the tomatoes softens and oil leaves edges.

Add cabbage, also other vegetables like peas, potatoes, carrot or any other vegetable

Add salt to taste and stir well. cook till the cabbage is translucent

Add rice and mix well and cook for 3-4 minutes.

Garnish with coriander leaves.

Ingredients
  

  • 200 grams rice
  • 200 grams cabbage – shredded
  • 1 medium sized onion -chopped
  • 1 medium sized tomato – chopped
  • 1 inch ginger.
  • 2-3 cloves of garlic if you like
  • 1-2 green chili
  • 1 tej-patta / bay leaf
  • 2 cloves – long
  • 1 inch cinnamon
  • 1 teaspoon cumin seeds / jeera
  • 2 tablespoon oil
  • 1 teaspoon red chili powder
  • 1/4 teaspoon haldi / turmeric powder
  • 1/4 teaspoon garam masala
  • 1.5 cup water for boiling rice
  • 1 tablespoon green coriander leaves – finely chopped
  • Salt to taste
