A simple recipe with a tender and moist crumb and just the right amount of sweetness. Most cakes rely on eggs to create that fluffy, cloud-like texture. The good news is that you can replicate the same spongy texture without the use of eggs. Eggs can be replaced with mashed bananas, applesauce, vinegar with baking soda, yogurt and silken tofu, depending on the recipe.
Do not try to reduce oil and curd. But still there is one way add 1 and 1/4 cups of curd and 1/4 cup oil, I assure you with the same results. Also after the batter is ready, don’t allow the batter to sit for more than the preheating time as baking soda reacts faster. And the time for baking depends on the cake pan and oven too. Some time it takes more than 35mins.

Eggless Vanilla Cake
Ingredients
- 280 grams all purpose flour
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- 1 pinch of salt
- ½ cup milk water
- 60 ml butter melted
- 60 ml refined oil
- 200 grams sugar powdered
- 4 tablespoon curd
- 1 tablespoon vinegar any white or apple cider
- 2 teaspoon vanilla essence or vanilla extract
Instructions
- Take all purpose flour in a strainer. Add baking powder, baking soda, a pinch of salt. Sift the flour. Mix it well.
- Preheat the oven to 180 degrees C or use convection of microwave oven.
- Grease pan with oil or butter or ghee
- Melt the butter and put in a bowl. Add oil.
- Add sugar, stir well.
- Add curd, vinegar and flour in the bowl and whisk it. Add water/milk.
- Add vanilla extract or essence and mix well
- Mix till the mixture starts flooding like ribbon nearly 4-5 minutes
- Pour the mixture in greased pan or mold.
- Place the pan/mold in the preheated oven in the center rack or microwave (Use stand in the microwave)
- bake at 180 degrees c for 30-35 minutes.
- Once done, let it cool at room temperature.
- Gently remove the cake on a wired tray.
- Your cake is ready
